For the inaugural Bites Without Flights post, we will be visiting the land of the Kiwi – New Zealand! I needed something that was easy to prepare with a simple ingredient list to take to work for our weekly Friday breakfast, but I wanted to be creative, worldly, and avoid “the regulars” (looking at you, donuts and breakfast tacos). Fortunately, this Easy Bacon and Egg Breakfast Pie Recipe from Saveur checked all the boxes and made for a great breakfast.

Heat oven to 400°F.
Whisk the ketchup and Worcestershire together in a small bowl and set aside.
Separate 1 of the eggs and place the egg yolk in a small bowl and stir in the cream; set egg wash aside.
Place remaining egg white on top of pastry, crack the remaining eggs and drop them on top of pastry, spacing them evenly, and spread bacon evenly.
Drizzle ketchup mixture evenly over eggs and bacon, and season with salt and pepper.
Fold dough overlapping the edge of the pan back over the eggs and bacon and brush with some of the egg wash.
Roll second pastry sheet into a 10″ x 13″ rectangle and place on top of eggs and bacon, tucking edges into sides of pan behind the first layer of pastry.
Cut 4 slits in the top of the pastry with a paring knife, and then brush with remaining egg wash.
Bake until golden brown and eggs and bacon are completely cooked, about 1 hour; cut into squares to serve.
